Barbecue Chipotle Chicken Thighs

Healthy Cilantro Lime grilled chicken topped with fresh avocado salsa making this dish a DELICIOUS low-carb & Keto Dinner in under 30 minutes!

Marinade Ingredients

  • 6 tablespoons olive oil
  • 2 tablespoons honey
  • 6 large cloves garlic
  • 3 chipotle peppers in adobo sauce (frozen peppers ok)
  • 1/2teaspooncumin
  • 1/2teaspoon Garlic salt
  • 1/2teaspoonfreshly ground black pepper
  • 2lbs chicken thighs

Salsa Ingredients

  • 2 avocado dices
  • 2 tomato diced
  • 1/4 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1/2 cup roasted corn
  • 2 Tbs. white wine vinegar
  • 1/4 cup olive oil
  • 2 Tbs. sugar
  • 1/2 teaspoon chili powder
  • Salt to taste

Directions

Marinade Instructions

  1. Place all ingredients, except chicken, into the blender or small food processor and puree.
  2. Marinate for at least 6 hours.
  3. Grill both sides of the chicken thighs

Salsa Instructions

  1. Whisk together the vinegar, oil, sugar, chili powder and salt.
  2. Pour over diced avocado, tomato, onion, roasted corn, chopped cilantro and stir.
  3. Top your warm grilled chicken thighs with the cold salsa.
